Edible Uses: Young flowering shoots - raw or cooked[1, 16, 37, 46]. These are harvested when about 10cm long and whilst the flower buds are still tightly closed. When cooked they are sweet and tender with a delicious flavour[K]. They are also very productive, the more they are harvested then the more they produce[K]. The shoots are produced from late winter until late spring[K]. When picking the stems, make sure that you leave behind a section of the stem with leaves on it, since the plants will often produce new side shoots from the leaf axils[K].
Leaves - cooked. A pleasant cabbage flavour, though they should not be harvested in quantity since this would depress yields of the flowering shoots[K].
